Heimann’s Processing Cherry is a well-known industrial variety of sour cherry of Austrian origin, selected in the late 19th century at the Heimann nursery. It is valued for its high yield, stable acidity, and dark red juice, making it ideal for juice production, jams, compotes, and the confectionery industry. Variety characteristics
- Appearance and Taste
- The fruits are round, with a dark red to almost black skin when fully ripe. The juice is intensely red, rich in pigments and acids (pH ≈ 3.3). The flesh is soft, juicy, and distinctly tart, making this variety ideal for producing concentrates, jams, and cherry liqueurs.
- Harvest Season
- Ripens mid-late: from the last ten days of June to the first week of July in most continental regions. The fruits ripen uniformly, allowing for single-pass mechanized harvesting.
- Suitable Soil
- Thrives best in moderately fertile, well-drained loamy and alluvial soils with a pH of 6.0–7.0. Tolerates slightly calcareous soils and achieves optimal yields in full sun exposure with regular irrigation during dry periods.
